Roasted Cauliflower and Red Pepper Cheddar soup

A smooth soup with a little taste of salt, savory and spice!
You will need
1 head of cauliflower chopped
2 red peppers chopped
1 zuchinni chopped
2 onions chopped (yellow or white)
4 cloves of garlic chopped
2 potatoes peeled and chopped
1 head of brocoli chopped
1 8oz block of cream cheese chopped into cubes
1 cup of shredded cheddar cheese
4 cups Chicken stock (powder start or liquid broth doesnt matter)
Garlic powder or salt
Dill
Red Pepper Flakes
Parlsey
(Cayenne Pepper if extra bite desired)
Paprika
Butter
Start by heating a large soup pot and i mean your big two handle pot!
Put all your veg in the pot, with a couple spoon fulls of butter and add in all your spices to taste EXCEPT paprika
Mix and roast your veggies on medium heat with the lid on for 10 to 15 minutes, stirring occasionally you will see your veggies browning and aroma beginning to be drool worthy!
Now add in your broth and it should just about cover all your roasted veggies
Cook until veggies are all soft
Now add your cream cheese, cheddar and a few heaping spoonfuls of paprika and use an immersion blender to puree your soup until smooth
Let cool and garnish if desired.
Serve warm on a cold day and enjoy!
