Perfect Pumpkin Pancakes!


All credit for showing me this recipe goes to Denise from my gym group, you literally cannot not laugh when you are around her!


These pancakes are eggless, flourless, and can be dairy free if you prefer!


You will need

1 cup of oats

1/2 tsp of pumpkin pie spice (or cinnamon)

1 tbsp of maple syrup

1/2 cup of pure pumpkin puree

1 tbsp baking powder

1 tbsp of apple cider vinegar

1/4 cup milk of choice (or water) * sometimes the recipes needs more if its too thick

1/4 cup chocolate chips (optional)


Combine all the ingredients minus the chocolate chips in the blender and blend until smooth. If batter is too thick add more milk or water


Let batter sit for 5 minutes to thicken


Preheat nonstick pan over medium heat. Once hot use 1/4 cup and pour pancake batter on the pan. Cook for 2-3 minutes per side until you can easily flip them. Repeat until batter is gone.


Top with maple syrup or eat plain, soo good!


Batter makes 6 good sized pancakes, easily doubled or tripled!
